Thermo-Stability
 

Thermo-stability is an important parameter as enzymes are heat-sensitive proteins. Proteins denature (unwind) at high temperatures because their tertiary structures fall apart resulting in lower enzyme activities.  Natuzyme has been engineered to withstand denaturing at high temperatures, enabling it to be included into animal feed prior to steam pelleting.
